As opposed to a firm mattress which provides little surface "give", a plush mattress (according to Sealy) offers more surface "give" and provides a softer surface comfort. Another group defines a plush mattress as a mattress with additional layers of padding or higher quality foam which ensures a cushy, comfortable feel. Hardly scientific definitions but these do serve to indicate the general concept that a "plush" mattress is more "cushy" than a firm mattress.
